Pao de Queijo (Brazilian cheese bread)

Ingredients
- 1/2 cup vegetable oil
- 1/3 cup water
- 1/3 cup milk
- 1 tsp. salt
- 2 cups tapioca starch
- 2 eggs
- 6 oz. hard cheese such as parmesan
Directions
- Preheat oven to 375°.
- Bring the oil, water, milk, and salt to boiling point on the
stove. Stop when white foam appears.
- To form balls, cover hands with oil, use a teaspoon to roll
spoonsful of dough into rough ball shapes (they will smooth out
during baking). Each ball should be about 1.5 in diameter. (Makes
about 20 balls.)
- Bake on a lightly greased sheet or parchment paper for 20-25
minutes until tops begin to brown.
